
PROP Food: Nourishing the Eden Prairie Community and Beyond
For over four decades, PROP Food has been a beacon of support for individuals and families in Eden Prairie and Chanhassen. With a mission rooted in providing food and comprehensive support services, PROP Food continues to evolve to meet the growing needs of the community. We had the opportunity to speak with Matt Dymoke, Director of Development at PROP, about the organization’s history, adaptations during the pandemic, and their plans for the future.
Adapting in the Face of Challenges
The pandemic forced many organizations to rethink their service models, and PROP Food was no exception. Before COVID-19, PROP operated without an appointment-based system—clients could simply walk in and receive assistance. However, the need to ensure safety led to the adoption of an appointment-based structure, a change that has proven beneficial and is now a permanent feature.
“People make their food appointments and are able to come twice a month. About 75% of what they receive is based on their choice, similar to grocery shopping, while volunteers help provide the other 25%, including essential items like dairy, eggs, and meat,” Dymoke explained.
This new system has allowed PROP to increase efficiency and expand its services. In 2022, the organization served about 3,400 people, but today that number has risen to approximately 5,007. While emergency funding during the pandemic helped sustain operations, those resources are now dwindling. Dymoke emphasized the importance of securing ongoing funding to maintain PROP’s level of service and ensure that all who need assistance continue to receive it.
Ensuring Accessibility and Support
In addition to food assistance, PROP also offers a variety of client services, including employment counseling and mental health support. While food distribution requires an in-person presence, the organization successfully integrated virtual options for other services.
“We've incorporated Zoom meetings for employment and mental health services, making it easier for clients to receive help without having to leave their homes. This shift has enabled us to assist more people in a more efficient way,” Dymoke shared.
The organization also introduced a curbside pickup option, allowing clients with health concerns or other accessibility needs to receive their food safely. Volunteers take orders over the phone, shop for the requested items, and deliver them to clients waiting outside.
Empty Bowls Fundraiser: A Community Gathering
A major highlight on PROP’s calendar is the annual Empty Bowls fundraiser, now in its 15th year. This beloved community event brings people together over a simple meal of soup and bread to raise awareness and funds for food insecurity.
“We partner with local restaurants to provide soup, and attendees can enjoy a meal with a free-will donation,” Dymoke explained. “There’s also a silent auction, live performances, and pottery demonstrations.”
The event embodies the spirit of community and solidarity. Last year, over 600 people attended, raising more than $100,000 to support PROP’s mission.
“The concept of Empty Bowls is widely recognized across the nation,” Dymoke noted. “By sharing a humble meal, we acknowledge that many in our community rely on food assistance and that we all have a role to play in ensuring no one goes hungry.”
Looking Ahead: Growth and Impact
As demand for PROP’s services continues to grow, the organization remains committed to meeting those needs effectively.
“We’re in a growth phase, and while we may not be launching new programs immediately, we are focused on delivering high-quality service to everyone who comes to us,” Dymoke said.
One of PROP’s key initiatives is the Summer Food for Kids program, which provides additional food assistance when children are out of school and lack access to free meals. In 2024, the program served over 1,000 children, and the team anticipates helping at least 1,200 in 2025.
In 2024, PROP served 4,996 individuals and 1,400 families. With continued community support, those numbers are expected to increase in 2025. While long-term expansion, including a larger facility, is a goal, the primary focus remains on optimizing existing resources to serve as many people as possible.

“We’re here to ensure that everyone in our community has access to nutritious food and essential support services,” Dymoke said. “It takes all of us working together to make that happen.”
